For clarity- I’m not asking for medical advice but advice about food options.
For background, I had a medically unexplainable (no risk factors or cause discovered) hemorrhagic stroke at 30 years old in February. I have left-side deficits that leave me in pain and fatigued every day. Add teacher-tired and mom-tired on top of stroke-related brain exhaustion. I am active as I possibly can be considering. I was overweight before the stroke, but nothing extreme. I’ve always been healthy.
It took 4 months to get my appetite back at all after having the stroke. I barely ate anything for those 4 months other than eggs and chicken breasts because I was told I was becoming protein-deficient in the hospital. I finally got to where I can eat again, but I still have issues with fruit, veggies, red meat, and saltiness as the textures and strong tastes aren’t as tolerable. I’m also so exhausted, I cannot find the energy to make and eat meals. I survive mostly on oatmeal, cereal, chicken, and eggs.
Despite not eating much, I am steadily gaining weight after the stroke. I am of course not as active as I used to be, but I still walk and move the majority of the day. I think it could be because, while I don’t overeat, I’m not exactly eating the healthiest options. I need things that are quick, easy, with simple textures and tastes that won’t provoke my appetite issues. Can anyone offer some advice?
