Work week evenigs are very difficult

First post here, I have been encountering extreme difficulty in the evenings during the work week. For context, I work in food service in a health care facility. My role in said kitchen is primarily a cartage truck driver. I transport prepared food between facilities and also look after other duties both before and after driving. As a rule, I get roughly 8,000 to 12,000 steps a day at work. Often times I will get 3,000 to 5,000 before 9 am. I hustle all day. I work a specified shift of 5 on, 4 off, 3 on. 2 off, rinse and repeat

I do well with my nutrition throughout the day. I am shooting for 1500-2100 calories. I usually have a protein and cashews for "pre-breakfast" at 6:15am while preparing for work, and then have a protein and a carbohydrate around 9:00am. Lunchtime is at 12:30, usually a protein and a fat.

Quitting time is 3:30pm. This is when it all starts to fall apart.

When I get home, I am so absolutely ravenously hungry that I can't hardly wait for my supper to cook, and it continues on like this the reast of the evening. I am eating an apple, or a handful of cashews, or spoon fulls of peanut butter, anything to get food into me. It ls nuts and I can't understand why this is happening. On my off days this is not nearly so much of a problem. I don't recall ever having to deal with something like this before.

I have thought about perhaps eating at a more maintenance level throughout the work week and doing the deficit thing on my off days. It is a recipe for sure failure the way things are going currently. I keep losing and gaining back the same 5 pounds over and over. I really hope someone can chime in and offer some solutions or advice.
