ELI5 - how can the scale show 3 LB weight loss in a day?

40M, 230 lbs, ulcerative coilitis. I do have an inflammatory disease that is well maintained but is most likely always present to varying degrees.

Here’s my question, if my TDEE is 2800 and there’s 3500 calories in a pound then how do I show 3lb weight loss on my more extreme days. It happened last weekend, I did OMAD so probably consumed 800 calories and ran a 2000 calorie deficit. Whereas a 3lb decline would be a 10,500 calorie deficit.

I understand there’s some variances in weight but this seems like a lot. Is it as same as normal weight variances and dehydration?
