How do i actually stick to a diet???

I'm 15, 250 lbs. Yeah that's morbidly obese in a lot of people's eyes, but i do actually live a very active life style. My eating just cancels it all out. I play football, weight lift year round, also play soccer, regularly bowl, mountain bike, and ski. I've tried a few times to actually stick to a reasonable amount of calories per day but I can never do it. If I had to estimate I'd say I'm eating around 2500-3000 calories on average per day. I don't actively count but i do think about it to myself at the end of the day, just so I can be honest with myself. Whenever I try to eat @ a deficit, I end up suuuuper hungry. I'll eat a meal and still be starving afterwards, which is the most annoying part for me. I've got the exercise part down (im actually trying out for a super prestigious volleyball club for girls that recently added a men's team pretty soon here) but i can't get the eating to go with it!! Id appreciate any suggestions you all have on just sticking to the diet.
