Zoodle Pad Thai

I have been craving Pad Thai for...I dunno...weeks. And I’ve been ignoring that craving and the 800-1000 calories that went with it.

But tonight...oh, I indulged. And it was heavenly. I made the sauce (calculated to be about 250 calories per serving of ~2 oz). I even added a tablespoon of peanuts (48 calories- all we had were the damn dry roasted ones...gah!) and some scrambled egg (120 calories).

One of the best parts of summer are the lovely veggies that come into season (and are therefore cheaper and exceptionally better tasting). And my organic health food store had zucchini today. I dug out my spiralizer (I really should use that thing more, but man, it sucks to clean), and made zoodles- which I steamed.

The sauce was perfect- creamy and a bit spicy. While the zoodles did water it down a bit, they added a nice crunch. And it met my craving.

Cravings can be so very, very hard for me. I get fixated on something and I NEED it. Tonight, noodles would have been great. But, I was able to treat myself a bit without blowing my calorie budget.

Recipe (about 3 servings of sauce ~2 oz each)

2/3 cup coconut water, 5-6 Tablespoons low sodium soy sauce, 2 Tablespoons brown sugar, Juice of 1 fresh lime, 2 Tablespoons rice vinegar, 2 teaspoons ginger, 2 teaspoons garlic (fresh chopped), 6 Tablespoons creamy peanut butter of choice, 1 teaspoon to 2 Tablespoons+ Siracha or Thai chili sauce

Sauce garlic, add coconut water, then whisk in other ingredients on low to medium heat. Keep stirring/whisking until everything is blended and there aren’t any chunks of peanut butter.

Mix sauce + 1.5 cups steamed zoodles (and chicken or shrimp if you want it) optionally, top with scrambled egg, crushed peanuts, and/or bean sprouts.
