About counting calories...

I see all the time here posts saying that counting calories is the way to go. But how do I do that?

In my country, food is mostly made from stretch. I don't eat many junk food or industrialized food, my diet is mainly plain real food. My lunch for example is rice, beans, salad and a protein. Every meal I eat has a diversified options in every group food.

So how do I count that? Do I have to weight every single thing I put on my plate? Is there an app for this?

Also, do I have to eat less than my maintenance calories or maintenance calories is the minimum I have to eat? Lets say I work out a lot during the day, how do I count what I need to eat to lose weight in a healthy way? Its so many different information online that I get confused.

Any help is greatly appreciated
