Why does it seem like I always gain weight the day after a salad?

Okay, a little back story. On June 23rd I weighed 366 lbs and as of this morning I was 283.2 (i weigh daily as a way to stay accountable). I tend to eat really low carb and I put everything in MyFitnessPal . My diet typically consists of the standard low carb stuff like eggs, cheese, meat almonds however I do enjoy a small apple daily and will throw in some pistachios when I’m in the mood. Occasionally my wife and I go out to a restaurant and I get the salad The salad consists of lettuce, diced tomato and cucumber and shredded cheddar cheese. I always get blackened chicken on top of the salad and I used 1.5oz of kens ranch dressing and 1.5oz of Buffalo wing sauce. However, it always seems like the day after the salad I gain at least a pound.

I try my best to estimate the calories, I do about 400 for the salad, 4oz of chicken and 1.5oz of each dressing which only comes out like 650 calories. I am estimating completely wrong?
