How do you get enough calories?

I'm 30F, 5'3", sw255 cw226 gw124. I also have PCOS and insulin resistance. A new specialist I saw for PCOS told me to eat low carb (but not keto, just less than 100g) and low fat.

I've been doing it, and I feel great! I don't get hungry, I don't binge...but I don't get enough calories. Around 800-1000, I'm done eating for the day, not hungry, and I have to scramble to find something to get me to 1200 calories. The last two days, it's been protein powder in almond milk. That's it. 200 cals of almost pure protein at 8pm.

I'm not sure if that's healthy.

But I'm not sure what to eat that's high in protein and calories but low in carbs and fat. A lot of low carb stuff is high fat and vice versa.

Does anyone have any recipe ideas or anything? How critical is the 1200cals at minimum a day rule?
