Having trouble getting started on my journey and sticking with it

I am having trouble starting my weightloss journey. I am 22F soon to be 23 and am 5'7. My CW is 180 and my GW is 125-130lbs (57-59kg) by the end of the year. I plan on eating between 1200-1300cal a day. I'm having trouble deciding if I need to make sure I'm eating super healthy food within those calories or just eating what I want and staying within those calories. I usually only drink water now and occasionally tea or diet soda. I plan on working out 6 days a week with weightlifting and 6-7 days a week with a very strict cardio program. Any tips on sticking with it and not giving up when you don't immediately see results?
