Can vitamins replace veggies?

Hi. Ill get straight to the point - I really dislike most veggies. Ive tried roasting, frying, steaming, raw, with sauce, with seasoning. The only ways Ive found I can tolerate them is by hiding them in other food like grating zucchini into a soup or mixing spinach into falafels, however that leaves me at still eating way less than I should be. As far as I know the main veggie benefits are vitamins, fiber and antioxidants. I like fruit and berries and I think that helps me with antioxidants. Fiber isnt a problem - I love oatmeal. So my problem is vitamins. Can I take vitamins to supplement what I'm missing by not eating veggies?

Please dont tell me to force myself to eat veggies. I tried that and ended up refusing to eat at all that day after 2 bites.

Edit: I'm also vegan - forgot to mention, sorry
