[tip] Super low calorie substitute for canned coconut milk (for my fellow curry enthusiasts!)

Fairly simple, so I'll keep this quick. If like me you're obsessed with trying creamy Thai curry recipes, try subbing canned coconut milk with the same quantity of unsweetened almond milk (the kind from a tetra-pak carton). I was shocked at how well this works. No difference to the taste at all! My supermarket's own brand canned coconut milk has 176kcal/100ml, but unsweetened almond milk has only 13kcal/100ml. So for a recipe which requires 1 can (400ml) of coconut milk, I can shave off 652 calories!

I haven't tried this with any other non dairy milks, but I have a sneaky feeling cashew milk will also work very well.
