Hit a new high in weight, time to start dropping lbs

I went into the doctor this week for my 3 month check-up and when they weighed me, I clocked in at 270 lbs. I'm male and 6'1", so I know it's not an absurd weight but it's also the most I've ever weighed. I changed a few months ago from a very active job to a less active job but I didn't really change my habits at all. I've been in the 240-260 range for years and known that it's not a particularly healthy way to live, but now it feels like too much. My favorite clothes are tight or no longer fit and I feel like I'm constantly jiggling as I walk around; as a result my confidence has taken a major hit.

So, I've decided it's time to make a change. I've tried limiting my diet and exercise before but I've never been able to stick to it. Recently though, I went with a friend to a climbing gym near my house and had a really great time. They also have free weights and the various fitness machines of a regular gym, so I decided I needed to allocate a portion of my meager funding to get a membership.

My goal for right now is to climb at least 3 times a week and go in to exercise in other ways 2 times a week. I'm keenly aware of burnout and my tendency to do so, so I'm trying to take it easy and not overdo it. So far I've been doing well, and it feels really good to know that I'm improving and working towards a goal. My goal weight right now is 220lbs, as that's dropping what I've recently gained and getting down to a better weight that I was at before. Ideally I'd like to get down under 200 but I want to see some improvement from myself first. My diet is still an issue, but I want to at least get to the point where physical activity is more tolerable and my endurance is better.
