What is the Science Behind Plateaus?

To start, I'm a 32 year male. My starting weight was 332lbs. My current weight is 301lbs. I've lost 30lbs since mid-December using CICO. I've been stuck at exactly 301.2 for over a week. I weigh in at the same time each day.

I understand that plateaus happen and that you just power through them but I don't understand how they happen.

I'm eating with a pretty significant calorie deficit each day (1,200-1,500 cals in -- enough to not be in "starvation mode") and I know my calorie counts are accurate. How is my body not losing weight when I'm under several hundred calories per day. What is the science of this?
