How accurate do you think this calorie counting is?

So it is very easy for me to be meticulous with calorie counting until I make dinner. I have a teenager in the house and I refuse to make two different dinners. So there is one normal meal at dinner time for everybody in the house, and unfortunately it's not meal prep chicken and vegetables in a pre-portioned amount in tupperware, because I cannot feed my teenage son that. (Kid needs more calories and more variety)

This is how I count the calories anyway. Do you guys think this is somewhat accurate or am I crazy?

I'll add up all the ingredients of the main "pot", (if it's like a skillet or a chili or something), then I'll measure how many cups are in each of that, do the math, and serve myself one cup generally.

So tonight is chili. Let's say the steak is 500 the sauce part is 300 and the vegetables are 200 (unrealistic but just for an example.) Okay that's 1000 calories and then I measure it by cups. And let's say it comes out to 5 cups. So I serve myself one cup and calculate into my calorie list 200 calories.

Obviously I think this is mediocre. Cuz you don't know if each cup is going to have more or less steak for example.

So how would you guys (hardcore CICO people) handle this? Is this the best we can do without cooking multiple dinners? Is this the best we can do if we want to sit down and eat the same thing as our family?
