How do I make CICO work for me?

I tend to start CICO and then I get derailed. For those that have been doing it for several months/years, how do you make it work for you? I tend to do alright when I pre-make my meals but this only lasts a couple of weeks and “life” gets in the way. How do you CICO without it effecting others around you? Specifically, I struggle with being invited over for dinner, when my husband cooks dinner, the impromptu “I got babysitting, let’s go out to dinner” and the weekend I can’t put my baby down long enough to make pre-make breakfast, lunch, dinner for the week. Also, do you always count ahead of time? Or do you eyeball it and sometimes count after? Experiences and successful strategies starting and and long term are appreciated. I’m just having a really hard time making it a part of my life regularly.
