How to change food habits when the taste of the food is the reward?

I've been reading a little of Charles Duhigg The Power of Habit. Habits are composed of cue->routine->reward. You're gonna have the cues, so identify them. Replace your old, bad routine with a new, good one and anticipate the enticing reward. OK, but the reward for eating crappy food is the taste of the food. How do you replace the routine when the routine and reward are closely linked? The routine of eating oreos leads to the reward of the taste of the oreos. You can't change that routine to eating baby carrots and get a similar reward.

What do you guys think? Not a good model for a snacking habit? Got some tips I'm not aware of?
