How to say 'I don't want' in a nice way so it's clear (forever)?

Hello!

It's very sad but it's usually my relatives (especially my mom and grandma) who often offer me to eat something sweet. And I say thank you but I don't want to eat that piece of cake and they become kinda offended because, well, "I tried hard and you even don't want to taste a bit of it". Sometimes it's easier to eat than hear it all out for several times.

How do you guys cope with your relatives' 'pressure' when no support comes from them? Why don't they understand that what cakes do is bad for my health?
