What are all the different ways you do/do not "count" calories?

Hello! I am looking to get some insight on different styles and ways of counting calories or knowing how much food you are putting in your body.

I have tried 4 different times to count calories over the past few years (split between mfp and loseit apps) but each time, I become overly obsessive with counting the calories. We make a ton of homemade meals and it was very difficult for me to log these because I got overwhelmed. For example, when I couldn't find the exact item/units I wanted or I could not measure the final amount I was eating accurately. This caused me to just stop counting and I did not lose weight in any of the "off" periods.

Does anyone have ways of an "in-between" method? For example, I thought about using one of those apps that takes pictures if my food and I would just guestimate my calories. That way I would still accountable but not obsessive. Does anyone else do this? I would like to lose 30-40lbs but can't seem to get there without some sort of counting program. Thanks for any tips!
