Road Back to 175 Pounds 25(M)

I have always been a bit over weight... and last fall I was at my most (around 207-208 pounds). I changed my diet and started walking... and gymming just a bit and from May 2019 to Feb 2020 I got down to 173 pounds. I held this weight on for about 2 months... and then COVID really hit and yeah... now I am back to 200-205 pounds range. I am just posting this because in 4 or 5 or 6 months, however long it takes, I want to look back when I am sitting at my goal weight of 175 pounds and be proud of myself. Diabetes runs in the family and I do not want to develop it... or at least prolong it if it may be inevitable due to genetics.
My goal this time is to do the same thing as before, healthier choices and 18-6 IF (once a week 22-2) and try running a bit more. I also want to work on breathing out of my nose as I am a mouth breather. I also want to try lifting weights and getting some sort of build on. I am 5"11 so 175 with a bit of muscle may look nice on me.

The ultimate goal is keeping it off. Any tips/suggestions on how to keep the weight off... once it is off? I read a lot on this thread about people losing weight and gaining it right back. (as it happened to me) Whats the best tip for this. Thanks!!
