Upped my calorie count but losing more weight....

Before I carry on, I wanna say I’m not complaining and that this is a good thing, I’m just curious how?

So for the past month I was eating 2 sweet potato and 2 chicken breasts every day and hardly lost any weight. I also hated eating. On Thursday I upped my calorie count to around 2,000 a day but now I’m using Things like ground Turkey, low fat cheese, mushrooms, spinach etc to make things I enjoy like Lasagne, meatloaf, stir fry. I still do the same amount of Carido and weights a day. 3 hours cardio, 1 hour weights. Since Thursday I’ve lost 5lbs which is great but just wondering why since I’ve started eating more?
