Until yesterday, my daily breakfast was a 2-egg scramble with sautéed spinach or bittermelon along with sautéed white onion. Also, a slice of wheat toast with butter and jellyjam. Nowadays, I enjoy 2 poached eggs, steamed spinach, and steel-cut oats.
I had to have it two days in a row to be sure but I don’t miss the old breakfast at all! I’m guessing I don’t miss the added cooking fat in the scramble because of the richness of the poached eggs. Then, even though I already really enjoy eating spinach, I discovered that just plain steamed is my favorite preparation. I don’t miss the toast at all because of the texture in the steel-cut oats which has a little bit of maple syrup, butter, and cinnamon in it that tastes great with the coffee.
I’m absolutely stoked that making such a huge leap resulted in an even tastier breakfast.
