Easy losing a year ago, why is it so hard now?

I'm F/33, 167cm, CW 84kg, GW65-70kg. Last time I was 70kg was about 2012, three years ago I was 93kg.

I lost some kg about a year ago. It was easy, I just ate around 1200kcal/day without feeling hungry and dropped fast and steady over a period of a couple of months. I actually enjoyed the feeling of not being full etc. But now Im struggeling. Goal is to eat around 1300, usually end up at 1500 (which I still consider being ok since its a deficit). But Im often hungry and have not found the same satisfaction in the feeling. My body resists it. I keep thinking, what am I doing differently now?

My philosophy is to restrict amount and not special foods. Im not a sweet lover but if I want a piece of chocolate I'll have one piece, etc. That strategy works best for me. I generally eat healthy, full grains, lots of vegs and good protein, etc. I've been thinking maybe to try to restrict the carbs a little since theyre so much kcal? But on the other hand I feel as if my body needs carbs to function well (tried keto, not for me at all). Also I work out quite a lot.

Any thoughts you might have would be very appreciated.
